All vintages are different and that 2014 was not the exception. Earlier this year predicted a campaign advanced stages because of budding, flowering and veraison were slightly advanced compared to previous vintages. But after these stages, the weather changed. Daytime temperatures did not climb as much as they should for the time he touched, and night fell more than expected, producing the grape ripening was slower and more gradual than normal. This slow and gradual maturation has allowed us to obtain wines with a good intensity of fruit aromas and freshness.
Rains respect harvest dates, providing a progressive collection of different areas of the farm and also varieties at its optimum point of maturation. Health was good and moderate productions.
The grapes arrive overnight, allowing to reach low temperatures to preserve the aromas of the variety and avoid unwanted oxidation. Pressing is performed immediately, then for 24 - 48 hours to make a natural clarification at low temperatures. Once clean the must is decanted to a stainless steel tank with a cooling system to perform a controlled fermentation between 16 - 18ºC. Once the alcoholic fermentation, the wines are kept in tanks, preventing oxidation, until the time of bottling.
Chardonnay grapes come from different plots with continental climate. Each of the properties has been fermented separately to maintain the characteristics of the grape. Some of the estates has worked with wood to give it a hint of vanilla in the final blend. The Moscato comes from the Penedès region, which provides floral and essence purely Mediterranean wine. The blend consists of mixing the different properties of the Chardonnay Moscato complexity to the wine, without moving away from the initial objective: to maintain the expression of fruit and freshness.

Codorníu were the first winery to create cava using Macabeo, Xarel·lo and Pallerada grapes. Codorniu owns the oldest Pinot Noir and Chardonnay vineyards, used for the production of cava with vines aged 30 years or more. This makes them experts in wine-growing and wine-making using these varieties. They were the first winery to use international varieties, with the first Chardonnay cava in 1984, the first rose cava using Pinot Noir in 2001 and in 2008, the very first Blanc de Noirs, using Pinot Noir. We have created our own style for the cavas we produce, combining local and international grapes, to make stylish, very expressive, refreshing aromatic cavas, with utmost respect for grapes used and the land they come from. A complete range of cavas, of differing styles, to satisfy everybody's needs.
Sustainable farming is the essence of our philosophy of caring for the vines. We intervene only when strictly necessary, with less input in order to promote natural balance and biodiversity. The result is healthier grapes, bursting with flavour.
