100% Xarel.lo from organic grapes. The wine is certified with the CCPAE quality mark from the Consell Català de la Producció Agraria y Ecologicala (Catalan Council of Organic Agricultural Production). "Font Jui" is a family estate of 4 hectares of Xarel.lo, with very particular clay-limestone soil.
Harvested by hand and selected on a sorting table. The grapes are cooled to 0-5 °C in order to carry out a pre-fermentation maceration. Pressing of the whole grapes. We only use the free run juice. Temperature-controlled fermentation at 14 º C. Part of this wine is fermented and aged in 300 litre French oak barrels (fine grain and medium toast). Only a few new barrels are used and the remainder are second and third vintage barrels in order to respect the character of the grape to the full. Ageing on the lees.
Appearance: Straw hue with pink tones.
On the nose: The wine’s fruit comes through in the form of pear, apple, and wild strawberry aromas. Mediterranean woodland herbs such as thyme, fennel and laurel. A floral hint of broom. The wine has a very spicy personality, reminiscent of Sichuan peppercorns. Pronounced mineral character.
On the palate: Fresh on entry, coating the palate. Good structure. Very pronounced, well-balanced, excellent acidity on the finish. Harmonious with nice final taste sensations.
This wine pairs well with a wide range of dishes. Excellent with appetisers and fried tapas. It goes very well with specialty cuisine, from Japanese (nigiris, sashimi, makis) to South American (ceviche, adobos, escabeches). Its lovely acidity makes it a good match for rice dishes, such as paella and risotto, marmitako (Basque tuna stew) and fish/seafood stews in general. In order to enjoy this wine to the full, we recommend drinking it between 9 – 11°C. Serve in a large glass, sit back and enjoy.
