"El Pago Las Canteras " is located on a plateau above one of the most beautiful terraces forming the Cinca River passing through the Somontano. The micro-climate of this plateau particularity lies on a perfect sun exposure and the continued presence of air, so the warm winds of the Ebro valley with fresh winds from the Pyrenees during the time of development and ripening are combined. Geologically, the soils are newly formed, are shallow and skeletal. The roots live in a red, rocky soil with poor water and nutrient matrix. Its development is limited in depth to 50 cm. by extremely calcareous and cemented horizon.
The harvest was done in the best conditions during the third week of September. After stemming and crushing of the best bunches, the wort was cooled and remained for three days in contact with the skins statically. After this period, the beginning of fermentation that lasted 12 days allowed. After completing this, the tank by gravity left the vats, allowing separate two qualities: the yolk wine, used to make this Syrah and wine press. Subsequently, the wine was introduced in barrels custom built specifically to raise him where he remained 10 months, then returned to the winery and after a period of rest was filtered and bottled to continue its aging process.
Appearance: Stunning color and deep violet well covered cherry.
On the nose: Greedy nose with hints of black fruit, licorice, wild berries, complemented with hints of sweet vanilla and mineral overtones.
On the palate: Very powerful and expressive mouth, with plenty of flavor where characters observed in the olfactory phase reappear. Meaty, especially sweet, nice and full.
It should be served at a temperature between 15 and 16 ° C with red salt, roasts and stews spiced meat hunting.
