After long work in the vineyards to achieve optimal ripeness, the grapes are picked by hand and placed in 20kg boxes. After selecting the bunches on the sorting table, they are pressed whole to extract just 35% of the juice, carefully separating the different parts of the pressing. The wine is fermented at 14 ° C in 600 litre French oak barrels in a temperature controlled cold chamber. The result is a fresh, elegant base wine with a good solid frame. One of or rules from the outset has been to achieve harmony between the aromatic expression of the grape variety, preserving its characteristic pale hue but avoiding the extraction of too much tannin. It is aged in bottles stored on their sides (“sur lattes”) for over 33 months, longer than required for a Gran Reserva according to the D.O. regulations.The process is 100% artisanal. The bottles are sealed with a cork stopper throughout the time they spend resting in the silence of the cellars, which enables the longest ageing periods. The bottles are riddled on “pupitre” racks and disgorged by hand. Brut Nature possesses the character of its terroir. Dosage is <3 gram/litre.
Appearance: Surprising hue which is virtually straw coloured with onion skins highlights.
On the nose: An unusual aromatic profile, ranging from subtlety to complexity. Pronounced floral spectrum (poppies, fresh red roses), red fruits (wild strawberries, blueberries, red currants) and smooth ageing notes (egg flans, butter and puff pastries). A constant touch of chalk in the background.
On the palate: Very fresh on entry, gaining in body and fine vertical fruit structure over the palate. Very smooth, crisp carbon dioxide, which blends with a lively, sustained acidity.
All kinds of appetizers, very nice with Asian cuisine. This cava will be enjoyed with the most exquisite dishes and is an ideal accompaniment throughout an entire “tasting menu”.To enjoy this cava to the full, we suggest you serve it at 9-11 º C
