42% Monastrell from strains of more than thirty years, 37% Pinot Noir strains over twenty years and 21% Trepat of strains planted 15 years ago in the Alt Penedès, on a surface of calcareous soil characterized by large numbers of fossils Marinos that contribute to the wine typical salina and mineral.
Monastrell of the vineyard Pedro, strains planted Between 1969 and 1973; Pinot Noir from the vineyard Verger, strains planted Between 1990 and 1992; Trepat of Ventura vines planted in 1999, loamy clay-calcareous soils, in the Alt and Baix Penedès (Lavern and L'Arboç area).
Harvested by hand and in small boxes during the second half of September. The Pinot Noir and Trepat were harvested with over-ripening at the end of September, to obtain the maximum expressiveness of the fruit.
The must was extracted with gentle pressure, the same day of its harvest. Obtaining the pink color by maceration of the must with the skins of the red grapes for 12 hours.
Excellent acidity and freshness of the fruit.
The brewing and bottle aging, started in February 2010. During the brewing and foam, they have been in contact with the mothers, at constant temperature and in darkness, completing this process until the uncork.
Brut Nature completely dry with no added sugar.
Advisable to open the bottle a few minutes before or decant (curiosity).
Technological cork: guarantees the absence of organoleptic deviations.
Taste in chianti glass.
