Picking and selection of the grapes by hand.
Each variety is vinified separately.
After de-stemming, the grapes are cooled to 14°C.
Soft pneumatic pressing to 0.2 bar pressure.
Split of the free run juice at 52%, followed by static settling lasting 24-48 hours.
Fermentation at a controlled temperature of 15 - 17°C for twenty days.
Careful blending of the two grape varieties.
Gentle clarification; tartaric stabilization and final filtering.
Second fermentation in its own bottle respecting the traditional method.
Appearance: Straw colored hue with golden highlights, packed with tiny, fine beads rising like a rosary to form a crown on the surface.
On the nose: Surprisingly powerful, expressive aromas of peach and baked apple, along with delicate, subtle aromas from ageing on the lees adding notes of toast and vanilla.
On the palate: Full, intense and elegant, with an aftertaste of apricots, greengages and brioche. The body gives us a sensation of freshness and refinement. Its creamy and velvety feel is seductive. A true harmony of flavors and textures.
This is a limited production cava made with grapes from old vines with an average age of 25 years and yields of 8,000 kg/ hectare. The vineyards grow in areas in the Upper Penedès, at an average altitude of 380 meters above sea level, where the soils are deep and slightly calcareous.
In keeping with the philosophy of Pere Ventura, the vines are grown respecting sustainability and environmentally-friendly principles and interventions in the vineyard are kept to a minimum.
Pere Ventura determines the optimal time to harvest and the grape clusters undergo careful selection in the vineyards.
Harvesting is carried out by hand and each grape berry is carefully checked on the sorting tables.

A sophisticated aperitif; Cupatge d’Honor is best appreciated with refined foods. Savor it with oysters, lobster and crayfish. White fish – grilled or in a light sauce – are a perfect match. It will make a splendid accompaniment to white meats or poultry with subtle exotic flavors.
As this cava has undergone long ageing, we recommend uncorking it a few minutes before serving it at a temperature between 8- 9 °C, to enable all the aromatic qualities and nuances to express themselves. Cava does not improve with age after it leaves our cellars. We therefore recommend you enjoy it within 18 months of acquiring it.
