    A limited edition of three great single varietal cavas. Gran Codorníu Gran Reserva is the true reflection of the Codorníu brand: Maximum respect for the varietal, for the typicity of the terroir and attention to detail. In this cava one can enjoy the grandeur of its prolonged aging in bottles, which has retained all the vibrant and fresh notes of the Xarel·lo grapes.

    Vintage 2007

    It was a dry year with normal Mediterranean climate temperatures alt hough the second hall of the year was colder than usual. Temperatures turned milder from the end of July onwards and the sea breezes made for cool nights. As a result, the vineyard was able to render the full flavour and aromatic potential of its grapes. Optimum grape ripening was reached in the first week of September.

    Grape harvest and Winemaking

    Our great cavas areelaborated in an artisan way. We select and harvest the premium grapes from Viña La Nansa to make Gran Codorniu Gran Reserva Xarel·lo. We carry out various sortings on the vine plot, classifying the grapes into different batches which are then elaborated separately. We harvested in September, taking advantage of the cool night temperatures to avoid oxidation of the grapes' aromas. The grapes were carefully picked by hand in 15Kg bins, and the first selection was made in the vineyard itself. We t ransported the bunches in a refrigerated t ruck to our winery, especially suited for this range of cavas. The grapes were sorted on arrival and then cooled and gently crushed in the pneumatic press.

    We fermented the must in small tanks ata temperature of 17°C. After fermentation we tasted the different batches and selected the ones that would be part of the final blend. This is perhaps the most difficult cava to vinify due to the Xarel·lo wines' susceptibility to oxidation. Having said this, after meticulous elaboration and aging in its lees for over 50 months, this cava has evolved extraordinarily and retained all its youthful spirit. Gran Codorniu Gran Reserva has aged slowly ata constant temperature of 14°C inside the thick walls of what was the first cenar at Codorníu. For this first disgorging we stirred less than one thousand bottles by hand on the racks to drive the lees towards the neck of the bottles, which will be brought out on the market in a numbered edition.

    Sensorial Properties

    Aspect: Strawyellow with very pale hues anda delicate crown of fine mousse.

    On the nose: Good aromatic intensity, primary notes of the Mediterranean foothills, fennel and thyme, resins, aniseed and white fruit (such as water pear). As it unfolds in the glass new aromas emerge such as bay leaf and w hite pepper.

    On the mouth: An intense mouthfeel with volume , structure and a good balance between fruitiness and acidity. A delicate creamy and exciting mousse. Reminiscences of aromatic herbs and delicate toasty notes re-emerge in the aftertaste.

    Food Matching

    This cava contributes organoleptic nuances, which go beyond the spectrum offered by other cavas. Not only does it pair well with a wide range of dishes (seafood, fish suquet, caldereta, rock fish, muscles, seasoned meat, venison, stews, etc ... ) but it can also be enjoyed on its own in order to discover all its nuances.

    Meet the Winery Codorníu

    Codorníu were the first winery to create cava using Macabeo, Xarel·lo and Pallerada grapes. Codorniu owns the oldest Pinot Noir and Chardonnay vineyards, used for the production of cava with vines aged 30 years or more. This makes them experts in wine-growing and wine-making using these varieties. They were the first winery to use international varieties, with the first Chardonnay cava in 1984, the first rose cava using Pinot Noir in 2001 and in 2008, the very first Blanc de Noirs, using Pinot Noir. We have created our own style for the cavas we produce, combining local and international grapes, to make stylish, very expressive, refreshing aromatic cavas, with utmost respect for grapes used and the land they come from. A complete range of cavas, of differing styles, to satisfy everybody's needs.


    Sustainable farming is the essence of our philosophy of caring for the vines. We intervene only when strictly necessary, with less input in order to promote natural balance and biodiversity. The result is healthier grapes, bursting with flavour.
