This Reserva has been aged for longer than 24 months, exceeding the time required for a Reserva according to the D.O. regulations. Medium dosage of 3-6 grams/litre. This cava is a departure from our usual methods. It is a blend where some of the grape varieties in its composition have spent some time in finegrained, lightly- toasted oak barrels. Partial malolactic fermentation is carried out. The result is a very pleasant cava with character.
Appearance: Straw yellow with golden highlights.
On the nose: Well defined with a friendly character. White flowers, daisies, along with fresh fruit, pears and Granny Smith apples, followed by subtle notes of yeast and fresh baked baguette. Very refreshing aroma of lime peel.
On the palate: Fresh on entry, coats the palate, good weight of fruit, medium build. Crisp carbon dioxide and great freshness make this a lively cava.
Ideal as an aperitif and great with all kinds of tapas. Especially good with ham and croquettes. Canned sea food - cockles, razor clams. Try it with ceviche!
