We are rememorating the heritage of a tradition begun over 450 years ago by Jaume de Codorníu. Jaume Codorníu pays homage to these origins and to the terroir and is dedicated to those who profoundly enjoy and love cava. A Gran Reserva in a limited edition with numbered bottles, whose blend comes from a rigorous selection from our most vintage vineyards and our choicest Pinot noir and Chardonnay grapes. With over 25 years of experience we are experts in growing and making wines from these exclusive varietals.

The 2008 vintage was characterised by low winter temperatures, low vineyard yields because of the rainfall during bud break, and big contrasts between day and night temperatures during ripening. All this contributed to grapes of exceptional quality which allowed us to make a Gran Reserva.

The grapes used to make Jaume Codorníu underwent the strictest quality selection. Only grapes from vine plots marked as exceptional were chosen to make Jaume Codomíu. That's the reason for the limited edition and numbered bottles. Chardonnay: Viña La Pleta. An exclusive vineyard located in the most continental zone of the Cava appellation. Its extreme climate {low rainfall and very pronounced changes in temperature) plus its shallow soil render a fuller concentration of flavours and aromas in this unique cava.

Pinot Noir: Viña el Coster. Located in one of the coldest zones of the Cava appellation, on the north face of the Prades mountain. A very special microclimate: cold, because of it faces north but also receiving mild breezes from the sea; the result are cool temperatures throughout the entire vineyard cycle. On top of this, the "licorella" soils {the same geological origin as the Priorat soils) give the grapes a very characteristic mineral touch. All this makes for a long growing cycle and slow ripening of the PN varietal. The Chardonnay grapes add structure, a long finish and density, achieving a fine mousse. Whereas the Pinot Noir, gives the wine delicacy and originality in addition to the varietal's characteristic fruity notes.

Our objective is to maintain the full expression of the fruit inside the bottle. We begin by planning the optimum harvest time for each varietal. The grapes were destemmed and crushed to obtain the exclusive musts which fermented at a temperature between 15 and 17ºC.

Once fermentation had taken place the resulting wines were then blended. The second fermentation was in the bottles, stacked in underground cellars at a constant temperature of 15-17ºC followed by a period of aging in contact with the lees of the yeasts to add more structure and aromatic complexity. For the 2008 harvest this aging lasted over 40 months.

    Sensorial Properties

Aspect: A pale golden colour with faint pink hints, typical of the Pinot Noir.

On the nose: lts intense and complex aromas stand out: peach, redcurrant, melon, ripe fruit plus aromas from aging with notes reminiscent of dried fruit and nuts, toasted bread, honey and even yeasts, which are brash on the palate.

On the mouth: A strong sensation of creaminess, elegance and a lingering finish.

    Food Matching

Due to its exceptional quality Jaume Codorníu is the cava of choice in select restaurants where it accompanies their tasting menus. It is without a doubt a gourmet cava which stands out for its versatility and butteriness. It makes an ideal pairing with fish and seafood cooked without spices, as well as with poultry and even mushrooms and certain meat dishes.

    Meet the Winery Codorníu

    cava codorniu

Codorníu were the first winery to create cava using Macabeo, Xarel·lo and Pallerada grapes. Codorniu owns the oldest Pinot Noir and Chardonnay vineyards, used for the production of cava with vines aged 30 years or more. This makes them experts in wine-growing and wine-making using these varieties. They were the first winery to use international varieties, with the first Chardonnay cava in 1984, the first rose cava using Pinot Noir in 2001 and in 2008, the very first Blanc de Noirs, using Pinot Noir. We have created our own style for the cavas we produce, combining local and international grapes, to make stylish, very expressive, refreshing aromatic cavas, with utmost respect for grapes used and the land they come from. A complete range of cavas, of differing styles, to satisfy everybody's needs.

Sustainable farming is the essence of our philosophy of caring for the vines. We intervene only when strictly necessary, with less input in order to promote natural balance and biodiversity. The result is healthier grapes, bursting with flavour.
