All the vineyards from which CODORNIU ECOLOGICA is made hold ECO (European Regulation) and NOP (National Organic Program, USA) certification and are located in the Upper Penedés (Parellada and Macabeo) and Central Penedés (Xarel·lo). Low yields per hectare guarantee premium grape quality (8500-9000 Kg/ha, the maximum limit is 12,000 kg/ha).
In order to avoid any contact between the organic grapes and musts and the rest of our production we decided to pick these grapes on different days to the rest of our grape harvest. Separate material was used inside the winery and the fermentation vats were separately labelled.
Both the products used during the entire winemaking process as well as the different stages complied with organic appellation standards.
Aspect: A pale yellow colour with a very fine mousse forming a persistent crown.
On the nose: Prominent fruity aromas (Granny Smith apple) and floral notes such as lemon verbena with sweet hints of fresh almond.
On the mouth: Balanced, fresh, creamy with a long finish.
Codorníu Ecológica was aged an average of 9 to 12 months to preserve the grapes' primary aromas: fruitiness, freshness and youth.
Codorníu Ecológica is ideal for highlighting the natural flavours of healthy cooking without many spices (wok-sautéed dishes, papillotes, baked vegetables, grilled or steamed fish and white meats.

Codorníu were the first winery to create cava using Macabeo, Xarel·lo and Pallerada grapes. Codorniu owns the oldest Pinot Noir and Chardonnay vineyards, used for the production of cava with vines aged 30 years or more. This makes them experts in wine-growing and wine-making using these varieties. They were the first winery to use international varieties, with the first Chardonnay cava in 1984, the first rose cava using Pinot Noir in 2001 and in 2008, the very first Blanc de Noirs, using Pinot Noir. We have created our own style for the cavas we produce, combining local and international grapes, to make stylish, very expressive, refreshing aromatic cavas, with utmost respect for grapes used and the land they come from. A complete range of cavas, of differing styles, to satisfy everybody's needs.
Sustainable farming is the essence of our philosophy of caring for the vines. We intervene only when strictly necessary, with less input in order to promote natural balance and biodiversity. The result is healthier grapes, bursting with flavour.
