    Cava Marta Joia Reserva Brut Organic Farming

    Fusion of our native varieties grapes Xarel.lo, Macabeu and Parellada. Cava Reserva: second fermentation in the bottle ageing on the yeast for more than 18 months in our cellars where developed the prefect maturity and aromatic potential. The vines benefit from extended sunshine and cool breezes from the nearby Mediterranean Sea. The resulting fruit is of a very high standard which is skilfully crafted into the MARTA Organic Farming Reserva Brut. It is elaborated in a clear bottle to show the purity and cleanness of the wine.

    Vineyards: Penedes terroir

    Region: D.O. Cava. Subregion: Upper Penedes (Parellada) and Central Penedes (Xarel.lo and Macabeu).

    Altitude of the vineyards: 110m (Xarel.lo), 250m (Macabeu) and 315m (Parellada).

    Climate: mild Mediterranean.

    Annual rainfall: an average of 465 l/m2.

    Soil: clay and calcareous.

     

    1st Fermentation: must to base wine

    Harvest: hand gathered to select the best grapes between September and October when each variety is at its peak of maturation. Organic farming vineyards.

    Pressing and must fermentation: pneumatic press. Musts selection, only the best juices will be for the Marta Organic farming Reserva elaboration. Each variety of grapes fermented separately at a constant temperature of 16ºC in stainless steel tanks.

     

    2nd Fermentation: base wine to Gran Reserve cava

    Blending of the base wine: Xarel.lo 40, Macabeu 30%, Parellada 30%.

    Bottling period: January 2012.

    Fermentation temperature: 15-18 ºC.

    Ageing: for more than 18 months. Vintage dated each year.

    Production: 15.000 bottles.

    Tastint notes

    Appearance: presents a pale yellow coloured cava with fine and persistent bubbles.

    On the nose: fruity hints and gentle aromas of ageing.

    On the palate: fresh, silky, slightly dry and very round palate.

     

    Enjoy it

    recommended for assorted salads, pasta, rice and fish dishes.

    Serve at a temperature of 6-8 ° C in flute cup, tall, thin and without decoration.

    História

    Miquel Canals Ollé fue el fundador de las Cavas que actualmente llevan el nombre de CANALS CANALS. Desde sus orígenes, la familia Canals Canals ha estado vinculada al cultivo de la viña y a la elaboración de vinos. La casa pairal y las bodegas de Castellví de Rosanes, pequeña población de la región vinícola de la Denominación de Origen Penedès, datan de 1903.

    De estas tierras recogían el fruto que cuidaban y preparaban para transformarlo en el vino que más tarde vendían en su casa. En 1975, Miquel Canals Ollé y su hijo Ramon Canals Llaverol, enólogo, decidieron elaborar las primeras botellas de cava.

    Desde 1978 y a raíz del matrimonio entre MŞ Àngels Canals Duran y Ramon Canals Llaverol, nació la marca comercial CANALS CANALS, que actualmente ofrece una amplia gama de productos que se elaboran con la máxima dedicación para satisfacer los paladares más selectos.

    Hoy, sus hijos, Ramon Canals, licenciado en farmacia por la Universidad de Barcelona, Master en Enología y que actualmente está realizando la licenciatura de Enología, y Marta Canals, estudiante de ciencias empresariales, se disponen a heredar toda la sabiduría familiar y a mantenerla como patrimonio cultural, en perfecta armonía con los avances técnicos y un mercado cada vez más exigente.
