Gran Codorníu, a faithful reflection of a grape and a terroir. The purest expression of the Chardonnay varietal from our oldest vineyards. The notes of fresh fruit stand out in this cava. Its magnificent structure comes from fermentation in contact with oak of part of its base wines and from its aging for over 15 months.
The Chardonnay grapes used to make Gran Codorniu come from Costers del Segre,a region with a dominantly continental climate with large variations between day and night temperatures and poor shallow soils that prevent excessive vine growth and contribute more concentration, body and more intense aromas of ripe fruits to this cava.
The winegrowing is based on integrated vineyard management methods that have been especially adapted to making sparkling wines. Harvesting of the Chardonnay varietal takes place around mid-August and is always carried out at night in order to maintain the grapes as fresh as possible and preserve their intense aroma.
we plan the best moment for harvesting of this varietal. After destemĴming, the grapes are crushed to obtain the must, which is then fermented at a temperature of 15ºC to 17ºC for 12 to 15 days. Part of the Chardonnay must is fermented in contact with oak thus acquiring new nuances, greater structure and complexity. After the fermentations the base wines are blended and the resulting wine is bottled along with the expedition liqueur.
The bottles are racked in our underground cellars where they undergo a second fermentation and aging in contact with the lees of the yeasts at a constant temperature (15ºC - 17ºC). This is known as the traditional method. It is a Reserve cava that has spent at least 15 months in the our cellars.
Aspect: Pale yellow with golden highlights. Clarity and brilliance. A fine mousse forming a persistent crown, which denotes its thorough fermentation in the bottle.
On the nose: Supple toasty notes intermingled with spring fruits: peach and cherry underlain with brioche and dried fruits and nuts from its aging in the lees. Very complex with elegant notes and generous aromas that are enhanced the longer it remains in the glass.
On the mouth: A rounded, complex, balanced and creamy mouthfeel. The butteriness of Chardonnay has enables us to craft this Brut nature without adding sugars in the expedition liqueur.
An ideal cava for accompanying a meal given that its complexity improves a wide variety of dishes: risotto, seafood, duck magret, stews, smoked dishes and heavy spices.

Codorníu were the first winery to create cava using Macabeo, Xarel·lo and Pallerada grapes. Codorniu owns the oldest Pinot Noir and Chardonnay vineyards, used for the production of cava with vines aged 30 years or more. This makes them experts in wine-growing and wine-making using these varieties. They were the first winery to use international varieties, with the first Chardonnay cava in 1984, the first rose cava using Pinot Noir in 2001 and in 2008, the very first Blanc de Noirs, using Pinot Noir. We have created our own style for the cavas we produce, combining local and international grapes, to make stylish, very expressive, refreshing aromatic cavas, with utmost respect for grapes used and the land they come from. A complete range of cavas, of differing styles, to satisfy everybody's needs.
Sustainable farming is the essence of our philosophy of caring for the vines. We intervene only when strictly necessary, with less input in order to promote natural balance and biodiversity. The result is healthier grapes, bursting with flavour.
