Appearance: Clean golden yellow. Slow-evolving fine and small bubbles.
Nose: Elegant, with fine ripe fruit, vanilla and toasty notes over a balsamic and smoked base of good compexity.
Final impression: Fine and elegant on first taste, with the bubbles very well combined. Pleasant in its evolution, standing out the creaminess of the foam over a vanilla, toast and bakery base, resulting from its long aging. Very long and complex aftertaste, where nose and mouth aromas are repeated and harmonised.
Combinations: Due to its structure and aging, it is ideal for caviar, smoked fish, meats and fish with sauce, game, foie, and cured cheeses.
