Clean and bright, pale straw colour with green hues. Abundant small bubbles with well-developed bead and crown. Clean and natural, white fruit aromas such as apple are deepened with a delicate and complex bouquet of freshly-baked bread, brioche and nuts. Dry and glyceryl, the finish is in perfect harmony with the patisserie aromas.
Combinations: Ideal as an aperitif. Goes well with fish and seafood, oysters, caviar and top-quality acorn-fed Iberian ham.

Why Bayanus? Sacharomyces Bayanus is the name of the yeast that produces the “foaming moment” or second fermentation in the bottle. The cava’s bouquet derives from the prolonged contact during ageing with the lees produced as Sacharomyces Bayanus breaks down. In a 375ml bottle the cava has greater contact with the lees than in larger bottles, with the result that the freshness of the primary aromas is maintained and the cava develops a bigger bouquet in a shorter period of maturation.
