This great aged wine was born in the year 1985 at the hands of Manuel Raventós Negra. With the accumulated experience of 30 years observing how this sparkling wine evolves and how it ages in the bottle, we decided to bring to market a limited number of old vintages: 1998, 1999, 2000 and 2001. Each vintage has a unique and different blend chosen personally by its creator.
The soils on the estate are calcareous and date back to the oldest period of the Penedès depression some 16 million years ago.The first layer comprises roots of up to 1 meter that live in the clay along with nutrients, organic matter and water. Second layer, from 1 meter down. This is where the plant meets the compact clays known locally as galera. Calcareous base rock encrusted with marine fossils.
The large number of marine fossils that characterize the structure and composition of these soils are the main source of the typical salinity and minerality of the wines from our estate.
Each year, following the harvest, Manuel Raventós tastes all the wines from the grapes from our estate and personally selects those that will form the coupage of this sparkling wine, which is meticulously designed to create a personal sparkling wine with a long ageing period that is always different.
A warm year with little precipitation. Over the course of the year the average temperature was 15.7 ºC (annual average 15.3 ºC) and the average rainfall was 396 mm (annual average 520 mm). Ripening occurred quickly due to the high temperatures. Today, Manuel Raventós 2000 is still a bit closed. It shows off the most differentiating aspect of Xarel.lo. These are the best bottles of the house, but are to be enjoyed to the fullest a little later. A discovery!
The grapes enter the winery by gravity. At each stage, the atmos-phere is controlled by dry ice. Slow pressing at low pressures. Static sedimentation at low temperatures. First fermentation in stainless steel tanks at a controlled temperature, separating varieties and soil types. Assembly, second fermentation in the bottle and ageing of 13 years in stacks, followed by a manual cla-rification on the shaking tables. Disgorging date stated on the back label.
